This recipe is especially adapted to suit women with IBS. It contains apricots which are a great source of dietary fibre, essential for IBS and also useful in supporting eye and skin health. And pumpkin seeds which are filled with magnesium, again, really useful for good gut health as well as a great source of protein and fibre.

Not only that but these taste great too and feel like a naughty treat whilst being refined sugar, gluten and dairy free, further reducing any inflammation with in the gut.

  1. Mix the dry ingredients together in a large mixing bowl.
  2. Melt the coconut oil if required, add the maple syrup and add to the dry ingredients, mixing gently.
  3. Add your baking paper to a flat baking tin. Then pour the mixture in. Press the mixture down and spread this evenly across the tin to get a uniform finish.
  4. Cook in an oven foe 15 - 20 minutes at 180. Leave to cool for a couple of hours before cutting into squares with a plastic spatula or the back of a butter knife so as not to ruin your baking tray.
  5. Enjoy this gut healthy treat. These will last for up to 10 days in the fridge or can be frozen and taken out the night before required.
