This is a really decadent breakfast and such a treat! Use your choice of toasted gluten free bread. The blueberries are antioxidant rich and will help your cells with their battle against free radical damage. This helps build your body back at a cellular level and will give you clearer skin and a smoother digestive journey.
Ideally this recipe will be for the rebalance part of your course as it contains maple syrup but you could try it with using only butter if you wanted to include it as part of your detoxing journey. The blueberries are sweet enough and will be a treat to the taste buds!

- 1 slice Gluten Free Bread vegan options also available
- 1 cup Blueberries
- 2 tbsp Maple Syrup
- 1 tsp Cinnamon
- 1 medium Egg or Organ vegan egg replacement
- 1 knob Butter or vegan alternative
- 1/2 cup Water

Instructions
- Toast the bread.
- Whilst the bread is toasting, add the blueberries, water and a tbsp of maple syrup to a saucepan and reduce.
- Whisk the egg with cinnamon and dunk the toast in so it coats both sides.
- Add the butter to a fry pan and then lightly fry the toast both sides until a crispy golden brown.
- Once the toast is ready, serve and add the blueberries. Drizzle the remaining maple syrup over the top and enjoy!
