Instructions
Toast the bread.
Whilst the bread is toasting, add the blueberries, water and a tbsp of maple syrup to a saucepan and reduce.
Whisk the egg with cinnamon and dunk the toast in so it coats both sides.
Add the butter to a fry pan and then lightly fry the toast both sides until a crispy golden brown.
Once the toast is ready, serve and add the blueberries. Drizzle the remaining maple syrup over the top and enjoy!
