This colourful salad is so simple to make and it beats more complex salads hands down for taste, texture and enjoyability!
Full of wonderful Iron, Calcium, Vitamin C, Omegas 3 and 6, Protein, low in calories but high in flavour.

Ingredients
- 1/2 packet Baby Spinach Leaves
- 8 - 10 cherry Tomatoes
- 5-10 pitted Black Olives
- 1/2 ball Mozarella Vegan cheese can be used if dairy intolerant
- 1 tablespoon Olive Oil
- 1 squeeze Lemon Juice
- 1 pinch Crushed Black Pepper

Instructions
- Roughly chop the spinach.
- Halve the cherry tomatoes and olives.
- Tear the mozzarella into small pieces.
- Toss all ingredients into a bowl, add the olive oil, lemon juice and black pepper and mix thoroughly.
- Serve and enjoy.

I love salads and people often think they are a boring option but feeling the nutrients glide into my system always makes me feel happy. And the colours in this salad are so pretty!
