This simple recipe was born out of leftovers from the fridge, as so many of mine are.

I fancied something a bit ‘brunchy’ and filling but also something that would not aggravate my IBS symptoms. This meal has loads of nutritional value with the gorgeous super food spinach for vitamins A, B and C and calcium and iron. And the energy giving potatoes will help reduce sugar cravings. This will also help to heal your gut and keep you more regular.

You could easily make a smaller portion of this for breakfast or enjoy it for brunch, lunch or dinner.

Crispy Bacon Potato Bites

  1. The faffy bit! Cut the bacon into small pieces, about 1 cm squared. Heat a saucepan with a little oil and fry until crispy. Then remove from pan the leave to one side.
  2. Cut the potatoes into small chunks about 2 cm. Then boil in a pan for 7 minutes until almost cooked. Drain and set to one side.
  3. Chop the pepper into small pieces. Add the pepper and the potatoes into a bowl and stir in a little oil and salt and paprika until covered. Then add these to the hot pan and continue to stir until cooked through.
  4. Add in the bacon bites and then the chopped spinach at the last minute to wilt over the dish and serve! Yum!!!
