These sweet treats are really filling, feel like a naughty snack but are in fact high in protein and a really useful course of good healthy fats and really high in Iron and Potassium, so perfect to strengthen your immune system and keep you feeling satisfied. Plus they are really fun to make!

Coconut Protein Balls

  1. MIx half of the desiccated coconut and all other ingredients in a bowl. The consistency wants to be moist, not too dry, not too wet. So that you can form little balls in the palm of your hands. If too wet, add more Cocao powder and Coconut. If too dry, add more oil and peanut butter.
  2. Roll the mixture into even sized balls and lat them on a baking tray. Once you have used all the mixture, sprinkle the remaining coconut over the your protein balls and roll them around so that it sticks to the surface. Then leave in the fridge to set.
  3. I bag these up in groups of 5 and put them in the freezer to take out as and when I want them. They last for up to 3 months in the freezer and up to 10 days in the fridge.
