Ingredients
- 1 cup Quinoa can be cooked the day before and left to cool
- 1 large Carrot
- 1 large handful Fresh Parsley
- 1 large handful Fresh Mint
- 1 medium Freshly Squeezed Lemon
- 1 tsp Extra Virgin Cold Pressed Olive Oil
- 1 pinch Crushed Black Pepper
- 1 pinch Rock salt

Instructions
- Wash and cook the Quinoa and let cool for 1 hour.
- Peel and grate the carrot.
- Wash and chop the herbs together.
- Mix the lemon juice, oil, salt and black pepper.
- Add all the ingredients together and serve.
