Gorgeous, tasty and simple recipe, sent in by one of our clients, Paul, which can be used as a main course, for lunch, or a side dish at a BBQ. Great served with salad or veg. A nice veggie alternative to meat heavy dishes.

Ingredients
- 1 large Red Bell Pepper (or orange peppe)
- ½ packet Feta Cheese (or Vegan Cheese works well)
- 4-6 Cherry Tomatoes
- drizzle Cold Pressed Extra Virgin Olive Oil
- pinch Seasoning crushed black pepper / sea salt

Instructions
- Half the pepper and remove seeds with a teaspoon, leaving the stalks intact.
- Cut Feta into 1 cm cubes.
- Cut tomatoes in half.
- Pack each pepper equally with tomatoes and feta.
- Drizzle over a little olive oil.
- Season with Crushed Black Pepper / Sea Salt to taste.
- Bake for around 1 you on low heat
- Serve with salad or Veg of your choice and enjoy!
