I have been meaning to try this recipe for ages and now I have, it will be a firm favourite! A bit time consuming but actually they were really simple to make! Handy if you are working from home, or at the weekend when you are less busy with other things. And they are very tasty and healthy!

They will keep in the fridge for 3 – 4 days or you can batch some up for freezing and take out a portion when you get the urge for a sweet treat, or have guests over.

  1. Cook the potatoes whole in the oven and scoop out the flesh. Mash this up into a bowl until smooth. Leave in the fridge to cool for 30 - 60 minutes.
  2. Add the egg and maple syrup and combine until well mixed.
  3. Mix the dry ingredients together along with the flavouring. I used DF chocolate chips and a little cinnamon for these but can't wait to try orange zest and orange oil flavouring for the next batch.
  4. Combine the wet and dry ingredients. Mix well. Layer this into a roasting or baking tray with at least 1 inch edge to it on top of greaseproof paper.
  5. Bake in the oven for around 25 minutes and then leave to cool for about an hour (this is the hardest bit as they smell so good).
  6. Once cooled, cut into squares and serve with DF cream or DF ice-cream of your choice.
