- 1/2 large Potato
- ¼ leek sliced
- 1 Egg
- 1/2 slice Ham
- 1 inch vegan cheese optional
- 1 knob Butter
- 1 medium Tomato
- 1 pinch Black Pepper optional

Instructions
- Peel and grate the potato.
- Chop the ham into small pieces.
- Chop and grate the leek.
- Finely grate the cheese.
- Slice the tomato.
- Add the butter to a saucepan and gently fry the leek and potato.
- Add the ham, cheese and egg to the mixture once the potato and leek have browned off.
- Shape into a hash brown shape using two spatulas (or wooden spoons) whilst cooking until golden brown.
- Flip over and brown until golden on other side.
- Lightly grill tomato (or have them fresh).
- Serve hash brown with tomatoes, season with black pepper and enjoy!
