Ham & Cheese Hash Brown
This tasty breakfast (or lunch) feels like a real treat but is actually not as guilty as it seems. Containing the right mix of slow release carbs, proteins and with a side of simple carbs this will keep you feeling fuller for longer.

  1. Peel and grate the potato.
  2. Chop the ham into small pieces.
  3. Chop and grate the leek.
  4. Finely grate the cheese.
  5. Slice the tomato.
  6. Add the butter to a saucepan and gently fry the leek and potato.
  7. Add the ham, cheese and egg to the mixture once the potato and leek have browned off.
  8. Shape into a hash brown shape using two spatulas (or wooden spoons) whilst cooking until golden brown.
  9. Flip over and brown until golden on other side.
  10. Lightly grill tomato (or have them fresh).
  11. Serve hash brown with tomatoes, season with black pepper and enjoy!
