I enjoyed this salad on Christmas Day eve, after our traditional turkey roast dinner at lunchtime. I was really ready for something fresh, green, crunchy and tasty to help digest the days food intake.

Beetroot and avocado are really great at helping the digestive process as they act as sweepers through the digestive tract collecting any loose debris and ensuring it doesn’t hand around. So this salad was essential for my after Christmas lunch meal. Great for both IBSC and IBSD as it provides bulk yet sweeps through the system. A good all rounder!

  1. For the salad, wash, chop and serve. It really is that simple.
  2. As a dressing you can either squeeze the lemon juice over the salad and sprinkle black pepper and fresh herbs over the top OR make up a dressing with lemon juice, black pepper, fresh herbs and stir or whisk these to form a sauce. You could add a tiny drop of olive oil and pinch of salt but I prefer the sharp taste without.
